Day light savings time is ruining my life! Literally! It's the WORST! We are suddenly all over the place.... Some would say a hot mess!

I LOVE this picture I took of everest. I just want to freeze it and keep him like this foreverrrrrr. the reason why I love it is because he has with him and on him all of his most precious things. Of coarse he has his soccer jersey on and he is nestled in his "blanky- pillow frogie".

I am a mom.

And I love it.

The other night while I was making dinner I had slade holding onto my leg crying (he lives in this position....no worries... He's not needy at all!). Everest was building a fort in the kitchen and I had pandora playing the ABC's song. It was crazy and silly and slightly comical. Then I thought about all of those people who have 8 or 9 kids and I think ...HOW?WHY?....who knows why really! Regardless I am happy that I have these boys to make me go crazy! I would feel purposeless with out them.

And then it's moments like this with everest that I can stand back and just watch my sweet boys grow up.

Aaron, here i give you wall street. i tried my heart and soul to find you something in NY. but, let's face it i found na-da! so i give you the stock exchange and hope your little dreams and immagination can run wild.

{kelsey, grandpa, jocelyn... aaron's cousin's} Grandpa/Papa Peck came with us girls. it was fun to have him running around in the city with us. he is one patient man to go on a trip of mostly shopping and some sight seeing with 10 girls. we loved having him there!

5:45am : slade woke up. i stepped on a metal airplane. it cut a gaping whole into the arch of my foot. ten min later.... i passed out. yup. me laying on the floor all in one large cold sweat. 8:29 : called poison control . . . slade bit into an instant cold pack that was in our first aid kit.{the kit was still on the floor from my ridiculous injury.} 8:42 : everest took one of his metal airplanes and beat it into my coffee table and make 3 deep gashes in the table. now i have to sand and repaint. *ehhhh! to be continued . . .

“Latah County Fair” the single only event that Moscow has. There were rides and baby pigs we wish we could take home but… really we came for the Elephant Ear. That’s right. A chewy scone basking in butter with cinnamon and sugar. This fair is the coziest and, quaint little thing on this side of the Mississippi. No lie. However, Slade’s leg’s in his skinny jeans and Everest’s facial expressions during the rides is the reason why it was so fun.

*being there for 9/11 was really special. there was such a reverence down in battery park due to the celebration of 9/11. it was nice to see that. i saw a lot of people whith a picture of someone on there shirt that said' "in memory of..." it made me think twice about all the families who lost someone in the terrorist attack. when 9/11 actually happened the unity that america had was overcoming to be apart of. it was nice to see a taste of that all over again. but, most of all it was nice to remember the families who lost someone that day.

i just got back from a week long vacation in NYC.

i cant say enough good things about this trip.

it was amazing to say the least.

it was sooo nice to re-visit the "selfish" angela.

i say selfish because for 7 days i only had to think about what angela wanted.

but, now i am home.

i was able to step away from my real life for awhile and,realise how amazing my life is as a "regular-old stay at home mom".

i needed this NY trip. {then again... who doesn't need a NYC trip?}

i can't say it enough i love northern idaho.

we drove from little moscow through the rolling wheat fields to an even smaller town.

which brought us to julietta, idaho.

where blackberries grow on the side of the road.

i know it's crazy!

we picked bowls upon bowls of blackberries.

today we saw bears on a reserve,

had a family nap,

ate hamburgers for dinner,

and then finished our day by picking blackberries.

it was nothing extreme or glamorous it was just us being us.

and that's kinda what this blog post is.... oops! but i know when the summer of 2011 is all said and done i'll look through my blog posts and will think awww i wish there were more pictures of the summer. so here is our adventure up timpanooke. two moose spottings, one fresh bear poop and one large realization that i'm not as huge of a fan of camping now that i am the parent; however, i will always and forever love camping because it reminds me of my childhood. camping with my sisters, a mom who made every camp site feel like home, and a dad who is always prepared!

we just happened to be in seattle during "gay pride day" :: waaaay too many men walking around in white-y-tighties, angel wings, high heels and rainbow boas!

i live in freaking alasssska!

the sun starts coming up around 4 am and it doesn't go down until 9-930pm. get this! in the winter it's dark at 430pm every night! it's crazy!

i'll be honest i'm not a big fan of blog posts without pictures; however, my computer was born in the late 1900's and is refusing to upload photos from my cameras. hence the non-photo blog. so here is the true grit... aaron finished finals on a friday and then that following monday we started our "crazy" summer. he flew home to UT to work two jobs and than flew back late thursday nights which means we only saw him fri, sat, and sundays. he did that routine for two weeks and then {dun, dun, dun..} he took off for a military training course for 3 weeks which brings us up to date. this also brings us to the fact of me being a single mom. it really hasn't been too crazy. sometimes you just do what you have to, and right now is one of those times! spring cleaning my house, potty training everest, and surviving NO sleep has kept me more than busy. everest has decided to have an imagenary pet owl. i'm not sure if he likes it or if he is afraid of his owl. it's a tug-of-war between scary and cute to him {kinda like santa}. potty training has been a breeze with him; so easy! i have NO tricks up my sleeve because it was ALL him. it honestly took 3 {easy} days and he was trained. don't get me wrong accident's happen here and there,but over all he is trained as trained can be! the boy's have decided to wake up around 5 to 6 am every morning, aaand if it was up to them they would go to bed around 5:30pm every night. no joke! lately i put them to bed around 6:30pm-it's crazy!! as for slade he is my round chubby ball. and, his first birthday is in a few weeks. WHAT! i know! i am sadder than sad about it! i want him to stay my little baby boy longer! he lives his life crawling around the house panting like a dog with rabies.i love it... i love it... he is always somehow eating laundry detergent or dish soap. whatev... he is alive! as for me i'm taking a large sleeping pill tonight at 7 and sleeping until it's fall! ha ha... seriously wouldn't that be fabulous!

I am starting to hate this monthly blog post. It's a sad reminder that my "newborn" is slowly becoming not-so "newborn" anymore. Father time continues to tick on and I continue to watch my babies get older. I'll admit this past month I was convinced my 8 month old had colic. Yes, colic. He was crying non stop. I figure it's teeth... But, here we are a few weeks later and still NO teeth. However the non-stop crying has stooped. I assume it was just a phase.... as EVERYTHING is with kids! Today Slade had his wellness check up. He rang in at the whopping 1% in weight. ONE PERCENT. I had to practically beg my doctor not to do blood work and stool samples on him. Everest was in the 3% in weight at Slade's age. I guess we just have tiny little boys. (does this mean our girls will be huge and our boys will be small?? scary how sometimes that works out.) He's healthy and right where he should be develop mentally so.... no worries? Right. He hasn't gained any weight since his 7 month check up... not even one ounce.

Today was the first day in a verrrry long time that the sun was actually out. We’ve had pure “Seattle weather” here in Moscow. It seems like I am craving everything that has to do with the sun and summer! I NEED (want) garage selling season to begin. I need my babies outside 24/7 with nothing else on but a diaper and a bottle of bubbles in there hand. I’m excited out of my mind because today I signed up to rent a 20 X 20 foot gardening plot in my community. It’s going to be FABULOUS! ... just wait you’ll see! i have been wanting a good and healthy granola bar but,every granola bar out there is loaded with sugar and oils. Lara bars are gluten free, sugar free, raw, good and, good for you! aaaaaaand the down fall is they cost 2$ a piece. this is why i make them. that way they are a lot cheaper!

this is my homemade take on a Lara bar....

i call them "cookies" and Everest eats them all the time.... poor kid doesn't know he is eating nuts and berries. literally.

1/4 C chopped dates

1/4 C dried apples {you can use any variety of dried fruit}

1/3C. almonds {any kind of nuts you like BUT almonds are the best!}

1/8 t. cinnamon

step 1: pulse fruit in a food processor until it becomes a paste.

step 2: chop up almonds in the food processor until they become very fine.

step 3: mix fruit and nuts together. {kneed with fingers}

step 4: form into 2 bars. wrap in cellophane and keep in the refrigerator.

who knew these were called Irish bells??... not me! i'm craving spring like crazy and these flowers cured my cravings today! i looove fresh flowers! {hint hint aaron!}

St. Patrick's day is coming... and every year I make corned beef and cabbage.

this is the best meal of the year for us!

seriously.

if you haven't tried corned beef and cabbage... than make it!

i am chuck full of recipes these past few day's ... it's super-duper!

Corned Beef and Cabbage

4C hot water

2 T. cider vinegar

2 T. sugar

1/2 t. pepper

1 large onion, cut into wedges

1 3-lb. corned beef , packaged with spices

potatoes, cut into quarters

1 head green cabbage, cut into wedges

Mix water, vinegar, sugar, pepper. Place corned beef in slow cooker. Put as many potatoes you want around the meat. Pour the vinegar sauce and spice packet over the beef and potatoes. Cook on high for 4 hours. Scatter cabbage wedges over the top. Continue to cook 1-2 more hours.

Why eat Quinoa?

Quina is considered a superfood. It is also considered a complete protein because unlike other grains it's not missing the amino acid lysine; therefore, making it a complete source of protien. Try using it more you might just like it! {I like giving it to Slade in his baby food because it's a great source of protien!} 1 C cooked quinoa

3/4 C 100% whole wheat

{make sure it's 100% WHOLE wheat because legaly companies can say it's whole wheat even though it's 50% wheat and 50% processed white flour}

2 t. baking powder {the aluminum free kind}

1/2 t. coarse salt

2 {organic cage free} eggs

1T coconut oil

1/4 C milk

2 T pure maple syrup

mix all dry ingredients and in a seperate bowl mix wet ingredients combine and cook in coconut oil in a skillit.

finally! Our long awaited Valentines date...

The boys were sick the week of Valentines day and last week I was sick

We haven't been out on a date ONCE since law school started in August.....

I don't dare leave my little babe with a 13 year old girl. BUT I do dare leaving both of my kids with Heather and Chris. THANK YOU! They were saints from on high to watch our kids while we went out tonight.

It was SOOO fun to go out with just Aaron and I! I didn't know what to do at dinner with just he and I. I kept wondering where the paper menue and crayons were. There was no sobbing tears at our booth. I never once said, "1...2....3.... alright your going to the car!" durring dinner.

It really was great!

I think I’ll leave work early today... Or maybe I’ll take a “long lunch” this afternoon... I’m going to come into work a little later today... Seriously what happened to those awesome excuses?!...I woke up to Everest in his room with his blankets, toys, and mittens covered in poop. I wanted to shut the door and hope that somehow it would clean it’s self up. So I did! Ha! ... Aaron came home from class and scrubbed until his finger nails turned brown. {grosse! Why do I say things like that} I’ve faced the facts that being a mom is a ton of work. It’s by far the hardest thing I have ever done or will ever do. I feel like I clean up all day long and at the end of the day toy’s are everywhere and dishes are piling up. It’s so easy to sit back and see all these cute moms and think they all have it together and that there houses are always tidy and clean. When the cold hard truth in my house is.... Mommy hood is freaking HARD! Six out of the seven day’s a week I claim the title “single mom”. So if you find me constantly with a twitch in my eye and dark circles under them and, my hair in a bun... you’ll know why. It’s funny... as I sit here ragging on being a mom in my head I am rebounding with reasons why I love it at the same time. But, I'm not going to go on and on about why I love bing a single mom tonight because... tonight I want to be Eeyore and rain on the mommy hood parade! Boo-Ya! Oh, and tonight Aaron and I were suppose to go out on our “romantic dinner for two”... instead the boy’s are sick! uh! So... it’s another night of homework and nursing the kids back to health! It all started a year ago when I read this book Food Rules. It completely changed the way I viewed food and changed the way I grocery shopped. Than I saw this documentary ...

Now I know the truth about where our food is coming from in the grocery stores. This movie was so informative and I honestly want everyone to see it. So do yourself a HUGE favor and watch this movie. Now Aaron and I are organic, free roaming, grass fed... FANS!

It was same day "surgery". It sounds all dramatic and scary but really it was just to get tubes put into my Sladie babies ears. This little bubba-gump of mine has had an earache almost non-stop since October. The final straw was over Christmas break when I thought I was medicating Slade for yet another earache. When on the tenth day of his antibiotic he broke out in hives all over his body..ALLLL over his little body. I take him into the dr's to find out it was an allergic reaction to the antibiotic... and come to find out he still had two, TWO earaches. I felt horrible for him. All this time had past and I had no idea he was in pain.{ I had NO idea that an antibiotic couldn't work!} Aaron and I named him "night furry!" because he was literally that. All of Christmas break he was up every hour in the night. I became a frightening beast with dark circles under my eyes. Anyway... All is well now! He has tubes and no more earaches! Love you Sladie! XOXO

Christmas was a little here and there and everywhere this year.

We had so much fun with our families!

My family hasn't been together in TWO YEARS! Aaron and I hadn't even meet Colton {1 1/2 old}, Estell {6 months old}, and Evan {4 months old} our niece and nephew's. I am so glad I married into such an awesom family and that I come from an awesom family. We really do miss both our families so much when we are away from them.

Everest played and played with his cousins while Slade earned himself the title "night furry"! He was up every two hours if not more a night. Come to find out he had two ear infections the entire 3 weeks we were in Utah. It's no wonder why he was up all night ... poor little muffin was in pain! {that's another story ...}

The big present of the day...a SHARK!

There was the actual birthday and than there was the celebration. It was a fabulous night together with out our kids (well... almost Sladie babie had to come!) We toasted, we laughed, cried and chatted the night away. I love,love LOVE my family. Were bossy, bratty, funny, emotional, stubborn, silly and the BEST of friends.

I don’t know how my parents did it. They got all 5 of there daughters to truly be besties! We haven’t all been together for TWO YEARS. I wish my dad had his 60th birthday every year so we could all get together more often... Heck!... I just wish we all lived closer!

The story is this...

My big sis Melissa was planning on coming home to UT for Christmas. However, she lives in TX, and with all the time it takes to drive to UT {yes, she drove from TX all the way to UT}, along with her husbands slightly crazy work schedule, they were only planning on being home for a meer 3-ish days.

You might not understand... I haven't seen Mel in a year and a half!

I didn't care if I saw her for one hour or for 3 days! I needed to see her!

BUT.... "boy-yoi-yoing!"

She surprised our family, showed up a few days earlier, and stayed for a whole week!

Truly and honestly the best surprise of the season!

We had to take Slade to the ER this week...

He had a really high fever, lethargic, glassed over, and his pupils were dilating in and out.

It was the most scared Aaron and I have ever been!

It might have only been a high fever but, Slade was honestly acting brain dead...

It was too scary for me to handle!

I hope we NEVER have to go to the ER again for one of our kids.

I honestly don't know how some parents to sick kids do it.

I left the hospital feeling like the worst mom in the world...

Sladie baby had two really bad ear infections!

He is such a smiley happy baby that I had NO idea!

After that Slade slept for 24 hours without waking up. I had to keep waking him up just to eat. After just a short 24 hour he is back to new!

"National Lampoons" Thanksgiving!

Yes, that’s right I said National Lampoons Thanksgiving… NOT Christmas!

why, one might be asking?... My Mom and Dad came all the way from Ut. to little ol’ Moscow for Thanksgiving Exciting right! :)… Here is why… My Mom and Dad hit a huge snow storm on there way up here and got in a car accident rolled the car three times the drive here took 2+ days {instead of the normal 10 hour drive} than… My Dad was like a little boy on Christmas all over again because he was planning to go fishing a few days while visiting me. {I guess northern Idaho has amazing fishing.} Turns out… We were told the fishing right now was HORRIBULE because of the weather!

that's why... anything that could go wrong did go wrong!

All-n-all I am so so so thankful my Mom and Dad walked away from the accident! My Mom and Dad truly and honestly are my best pals. I am SO glad they were able to come and spent Thanksgiving day with us!

Back in my single days I knew one thing would be certain in my future husband… I said I would NEVER EVER marry someone who was in the military. It flat out scared me! I know I am a needy person and I KNEW I could NEVER handle my husband being deployed. Whelp… Here I am married to a military man He may not be a veteran {yet} But He is in the military and I honor and love that about Aaron. Ever since I met Aaron and his family I have fallen in love with our country and have a huge appreciation for all the men and women who sacrifice SO much for everyone who lives in America. I am grateful for my dad, Aaron’s dad & for Aaron because they all three served our country!

Pumpkin doughnut muffins

batter:

10 T. butter

3 C. flour

2 1/2 t. baking powder

1/4 t. baking soda

1 t. coarse salt

1/2 t. nutmeg

1/4 t. allspice

1/3 C. buttermilk

1 1/4 C. pumpkin puree

3/4 C. brown sugar

2 large eggs

sugar coating:

3/4 C. sugar

2 1/2 t. cinnamon

1/4 C. butter

In a medium bowl whisk together flour, baking powder, baking soda, salt, nutmeg, and allspice. In a small bowl, whisk together buttermilk, and pumpkin. In a large bowl, using an electric mixer, beat butter and brown sugar until light and fluffy. Beat in eggs, one at a time, scraping down bowl as needed. With mixer on low, add flour mixture in three additions, alternating with two additions pumpkin mixture, and beat to combine. Butter and flour 12 muffin tins.

Cook for 30 min. @ 350 degrees

Let muffins cool. Brush all over with butter, then toss in sugar mixture.
